Abstract. The article analyzes the market of locally produced food products in Syktyvkar using butter as an example, and determines the prospects for growth in sales of local food products. The materials of the article contribute to the identification of market niches for the growing production and sale of agricultural goods produced in the unfavorable natural and climatic conditions of the North. Quantitative assessments of the preference of consumers for choosing local food products from various local producers are proposed. It is recommended to conduct marketing campaigns to expand consumer demand for local food products. The prospects of the study are related to the expansion of surveys of consumer preferences in order to increase the efficiency of sales of local food products in the Komi Republic.
There are two opposing points of view about the benefits of local food products: positive and negative. Positive aspects of the production and consumption of local food products include transparency regarding the ingredients in food products; brand history authenticity; availability of nutrients in local foods that are not found in non-local foods. On the negative side, there is less complete information about food products produced quite far from the place of consumption, the absence in non-local food products of some specific food ingredients that organically fit into the diet of the local population.
The expansion of large retail chains, to a certain extent, is in conflict with the production and sale of locally produced food products by local agricultural organizations, households and farmers. This paper proposes such a form of implementation of the interaction between consumers and producers of local food products, which involves the participation of public organizations in this process as a coordinator of various activities within the framework of the interaction of local producers and global food supply chains.
